With us the cooking in La Scarpetta is an art not a
science. Instinct and feel are used, not formulas. There
is really no such thing as Italian cooking. It is a more
regional expression and Italian cooking is a modern
term. Our cooking has more emphasis on the South,
drawing specifically from Ciociaria, Abruzzese and
Campania. Marcella Hazan says "There is no such thing as
Italian haute cuisine because there are no high or low
roads in Italian cooking." Casalinga" is our term for
this.
